Popovers a la Mom

I was in the Baltimore/DC area this past weekend meeting my new niece and nephew (twins!) and while the visit was short, it was great! It's always relaxing to be and my parent's in law and, while I was there, mommy in law taught me how to make delish popovers. Are you familiar with these exquisite rolls? A popover is a light, hollow roll made from an egg, flour, and butter batter. YUM! Here's the recipe in case you're feeling inspired...


3 tbsp unsalted butter, melted
1.5 cups all-purpose flour, spooned and leveled
1.5 cups whole milk
4 large eggs
1/2 tsp kosher salt
Heat over to 400 degrees and brush the cups of the pan with butter (popovers are sold at Williams Sonoma but you can use a regular muffin pan)
In a large bowl, whisk together the flour, milk, eggs, butter, and salt until only a few lumps remain (do not over mix)
Divide the batter among the buttered cups and bake until puffed and a deep solid brown - 30-35 minutes. Do not open oven door before 30 minutes or the popovers will deflate.

And voila!
